店名的由來也很有趣「蔣先生的老婆是主廚——正港四川辣妹,而夫以妻為貴,當然就叫蔣夫人」一句玩笑話,說的卻是真心

每到夜幕時分,蔣先生會親手點亮店裡的燭火

Her name is Deng Xianhui, from Dazhou, Sichuan
— where the air carries the weight of mountains and the food burns with layered heat and fragrance.
Her earliest memories are of smoke rising from the kitchen, spices tumbling in a wok, and a flavor so distinct it never left her.

When she came to Taiwan, one thing stayed unchanged — she wanted to keep that taste alive. She met Mr. Chiang, and together they started from a cloud kitchen, cooking pot by pot, turning memory into dish after dish.
Customers came once and never forgot.
Every year, the same families called to reserve their New Year's feast.
Without fail.Step by step, memory became a restaurant.

The name has a story of its own.
His wife is the chef — a true Sichuan woman, fierce with spice. And since a husband's honor comes from his wife, the restaurant could only be called one thing: Madam Chiang's.Said as a joke, meant with the whole heart.
Every evening, Mr. Chiang lights the candles himself.
That quiet flame is their way of saying — the table is set, the food is ready, and tonight, you are home.
